Chef Jaime has been in the catering industry for now 20 years. From leaving school he went straight onto Westminster College in London to do the NVQ level 3 Westminster Diploma which is the most prestigious catering college in the UK. While and Westminster College Jaime won Gold in the 5 Nations Menu Challenge and also reached the regional finals of the Nestle Toque D’or. Both of these competitions were held at London’s Hotelympia in Earls Court.
After college he went on to work at Claridges hotel which is Internationally well known for being one of the best hotels in the world under John Williams M.O.G.B who has now moved to the Ritz.
From here Chef Jaime moved to the South of Spain to learn the local cuisine. While in Spain he also enrolled in the level 4 NVQ International Diploma in Culinary Arts which is the highest qualification possible where he graduated with a Merit.
Chef Jaime and now his wife opened a restaurant on the Coast serving International cuisine to local expats in the area. The restaurant put Jaime on the map for his culinary expertise which then drove him into consultancy. With so many restaurants opening and Jaime’s services in high demand there was a clear path that needed to be followed. Opening restaurants like James Hewitt’s Polo House and Jean-Christophe Novelli’s latest restaurant is no easy challenge. So these were big projects ahead which took months of planning and training.
In 2010 Chef Jaime founded Bravura Private Chefs, a personal chef business in Spain which still operates today.

They are based in Brighton so much of Bayside is also regular users of the personal chef service for outsourcing weekly meals.
