

Making fresh pasta isn’t as hard as you might think. Give this recipe a go and see how easy it is. If you haven’t got a food processor you can also do it in a kitchen aid with the dough hook or your’ll need to put some elbow grease in and do it in a bowl by hand. It’s much easier if you have a pasta machine otherwise it will be quite tricky to get consistent and even sheets.
800g pasta flour (Mulino Caputo if you can find it) or plain white
1/2 teaspoon sea salt
4 whole medium sized eggs
9 egg yolks
Put the flour, salt, eggs and egg yolks in a food processor and pulse blend until the pasta begins to come together into a loose ball.
Kneed the pasta on a flat surface, lightly dusted with flour. It will take about 3 minutes before the mixture is smooth. If the dough is very stiff you may have to place back in the processor and add another egg. Leave the fresh pasta to rest for 20 minutes before rolling out.
